This is a delicious recipe that I made over the Christmas holidays. It’s a chewy oatmeal raisin chocolate cookie with a hint of cinnamon. You can even add walnuts to this recipe but it’s optional.
Makes 48 cookies
Ingredients:
3/4 cup soft butter 3/4 cup light brown sugar 3/4 cup white granulated sugar 2 eggs 1 tsp vanilla extract 1 1/4 cups all-purpose flour 1 tsp baking powder 3/4 tsp ground cinnamon Pinch of salt 2 3/4 cups quick oatmeal oats 3/4 cup raisins 1 cup chocolate chips You can add 1 cup of walnuts too. (optional) |
Directions:
1. | Preheat oven to 375 degrees |
2. | Combine the butter, white sugar, and brown sugar in a bowl and stir until smooth. Beat the eggs and vanilla in a separate bowl until fluffy then mix it in with the other ingredients. Add the flour, baking powder, cinnamon, & salt. Stir in oats, chocolate chips and raisins. Drop by teaspoonful onto an ungreased cookie sheet. |
3. | Bake 8 to 10 minutes in the preheated oven or until they look golden brown. Cool the cookies for about 20 minutes, and then remove them from baking sheet. |
· Refrigerate any leftover cookie dough for about a week, or you can store it in the freezer for about a month.
